I discovered this in a video that my wife sent me, and it became an immediate hit in our family. I shared this with many people, and have decided to share it with all of you.
This recipe works best probably during the summer, but you should be able find fresh fruits all year round. You’ll need two or three different types of fruit, cut into small pieces about the size of your thumbnail. Our favorites are blueberries, bananas and strawberries.
THE RECIPE
You’ll need a dozen 8 ounce Mason jars and one or two large muffin pans.
MAKES 6 JARS (1/2 Pint) at a time, per muffin pan.
Fruit:
6 cups any fruit or combination of fruits, cut up into small pieces. Use fresh if you can.
Dry Ingredients:
1/2 cup flour
1 cup brown sugar
pinch of salt
1 teaspoon cinnamon (optional)
one stick of butter, cut into patties
Recipe:
Cut up fruit and put in mason jars until one quarter full.
Divide between 8 wide-mouth, 1/2 pint mason jars. (You’ll use about 1/2 cup – 2/3 cup of fruit per jar).
In a mixing bowl, stir together the flour, brown sugar, cinnamon and salt.
Spoon 1 teaspoon of the mix on top of the fruit in the jars.
Add more fruit until jars are full.
Spoon remaining dry mixture slowly onto the fruit. Shake jars gently to distribute the dry mixture.
Cut cut up the butter into patties. Place one patty on top of each jar.
Baking:
To bake, place jars (without lid) into each muffin pan slots. Place muffin pan on top shelf of the oven.
Preheat the oven to 350F (175C). Your cooking time will vary depending on whether or not you are using frozen fruit and which fruits you are using. Set timer for 35 minutes, but keep checking until the mixture gets thick and starts to bubble, possibly up to 50 minutes.
Remove the muffin pan from the oven and let cool for about 5 min.
These cobblers can be eaten hot right out of the other, or place the refrigerator and eaten either cold or reheated.
Extra bonus: We like to put a scoop of vanilla ice cream on top.
